Great sandwiches

Tuna Niçoise Sandwich

Makes 2 sandwiches

Ingredients:

  • 4 slices Kingsmill 50/50 (with spread or butter if required)
  • 200g can tuna steak in spring water, drained
  • small red onion cut into thin slices
  • 4 pitted black olives, quartered
  • 1 hard boiled egg, chopped
  • 8 basil leaves, ripped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • 25g Parmesan cheese shavings
  • 15g lambs lettuce or small green salad leaves

Method:

Combine tuna with sliced onion, olives, egg and basil leaves in a bowl. Whisk the olive oil and lemon juice together then pour over the tuna mixture. Divide the tuna mix between two slices of bread, sprinkle with Parmesan shavings and top with lettuce. Add the remaining slices of bread, cut in half and serve.
