Bacon & Brie Bruschetta

Serves 2, 20 mins preparation

Ingredients:

  • 2 Kingsmill Muffins
  • 1 garlic clove -cut in half
  • 2 teaspoons olive oil
  • 1 large plum tomato, sliced
  • 4 rashers lean back bacon, grilled
  • 4 slices of Brie cheese
  • Freshly ground black pepper
  • Fresh basil leaves (garnish)

Method:

Grill bacon and keep warm. Halve and toast the muffins on both sides, then rub the cut sides with the halved garlic clove and drizzle with a little olive oil. Layer on the plum tomato slices and then add the grilled bacon rashers. Top the bacon with a slice of Brie and heat under the grill until the cheese begins to melt. Season with fresh black pepper and garnish with the fresh basil leaves. Serve immediately.
