Big City Brunch
Serves 2, 15 mins preparation
Ingredients:
- 2 Kingsmill Muffins
- Cream cheese
- Smoked salmon
- Lemon juice
- Freshly ground black pepper
- Chopped fresh chives to garnish
- Wild rocket salad
- Low fat mayonnaise
Method:
Halve and toast the muffins on both sides. Spread with cream cheese and top this with a layer of thinly sliced smoked salmon. Drizzle with a little freshly squeezed lemon juice, season with freshly ground black pepper and garnish with some chopped fresh chives. Serve immediately with a wild rocket salad on the side and a little low fat mayonnaise.
