The Big Brunch
Ingredients:
- 1 Kingsmill Muffin per serving, or 2 slices of Tasty Wholemeal per serving (with spread or butter if required)
- 4 lean back bacon rashers, grilled
- 2 eggs - scrambled
- Baked beans (reduced salt and sugar)
- Chopped parsley or chives
- Brown sauce or tomato ketchup
Serves 2, 20 mins preparation
Grill bacon and keep warm. Cook the scrambled eggs and divide
them between the two muffin halves (or two slices of toast). Top
with the bacon and add a good spoonful of hot baked beans. Sprinkle
with a little chopped parsley or chives and serve immediately with
brown sauce or tomato ketchup on the side.
