Easy Peasy Chicken Caesar Pockets
Ingredients:
- 2 Kingsmill 50/50 Pockets
- 1 roast chicken breast
- 1 rasher lean smoked bacon grilled
- 1 tablespoon low fat mayonnaise
- 1/4 teaspoon Dijon mustard
- Small squeeze lemon juice
- Small grating parmesan cheese (approx 10g)
- 4 baby Cos lettuce leaves
Slice the skinned chicken breast then chop the grilled
bacon. Combine the mayonnaise, mustard, lemon juice and
cheese to make the Caesar sauce. Add the chicken and bacon to
the sauce and mix. Pack into a Kingsmill 50/50 Pocket along
with the Cos lettuce and serve.
