Goat's Cheese with Roasted Pepper Sandwich
Ingredients:
- 4 slices Kingsmill Tasty Wholemeal bread
- 15g frisee or baby green leaf lettuce
- 120g goat's cheese
- 100g grilled or roasted marinated red and yellow pepper pieces
- 3 small vine tomatoes, sliced
- 1/2 tablespoon low fat mayonnaise or tomato relish
Place the lettuce on 2 slices of bread. Divide the goat's cheese
between the two sandwiches, top with the peppers and tomatoes.
Spread the mayonnaise or tomato relish on the remaining 2 slices
and place (mayonnaise side down) onto the sandwich. Cut in half and
serve
