Griddled Halloumi and Sunblush Tomato Pocket
Ingredients:
- 2 Kingsmill 50/50 Pockets
- 150g low fat Halloumi cheese sliced
- 1 teaspoon low fat mayonnaise
- Lettuce leaves
- 6 pieces sunblush tomatoes
- 4 fresh basil leaves torn
Place the sliced halloumi on a pre heated griddle pan and cook
for around 2 minutes per side. Place the Kingsmill 50/50 Pocket
into a toaster to warm through, open the pockets then spread on the
mayonnaise, place the lettuce into the bottom of the pocket
then add the halloumi, sunblush tomatoes and lastly add the basil.
Serve either hot or cold.
