Salad Sandwich
Ingredients:
- 2 slices of Kingsmill Malted Grain Farmhouse bread
- 2/4 lettuce leaves
- 2cm cucumber, sliced
- 1 tomato sliced
- 4 slices of pickled beetroot (or can use cooked fresh beetroot)
- Salad cream or low fat mayonnaise
Place half of the lettuce leaves on one slice of bread. Top with
the cucumber, tomato and beetroot slices. Add salad cream or
mayonnaise, then place remaining lettuce leaves on top before
covering with the remaining slice of bread. Press down lightly and
cut in half or quarters to serve.
