Smoked Salmon Tsatziki Sandwich

Ingredients:

  • 2 slices Kingsmill Gold Farmhouse Soft White bread (with spread or butter if required)
  • 5cm piece cucumber, deseeded and diced
  • 2 teaspoons chopped fresh mint
  • 2 tablespoons crème fraîche or low fat Greek yogurt
  • 5/6 sprigs watercress
  • 50g smoked salmon slices
  • Freshly ground black pepper

Make the Tzatziki by mixing together the cucumber, mint and crème fraîche or yogurt. Place the water cress onto one slice of bread, then top with the smoked salmon slices and season with freshly ground black pepper. Spread the Tzatziki over the salmon and cover with the remaining slice of bread. Cut in half and serve.
