Bacon & Brie Bruschetta
Ingredients:
- 2 Kingsmill Muffins
- 1 garlic clove -cut in half
- 2 teaspoons olive oil
- 1 large plum tomato, sliced
- 4 rashers lean back bacon, grilled
- 4 slices of Brie cheese
- Freshly ground black pepper
- Fresh basil leaves (garnish)
Grill bacon and keep warm. Halve and toast the muffins on both
sides, then rub the cut sides with the halved garlic clove and
drizzle with a little olive oil. Layer on the plum tomato slices
and then add the grilled bacon rashers. Top the bacon with a slice
of Brie and heat under the grill until the cheese begins to melt.
Season with fresh black pepper and garnish with the fresh basil
leaves. Serve immediately.
