Mini Crumpet Pizza
Ingredients:
- 4 Kingsmill Crumpets toasted
- Tomato pizza topping sauce or passata
- Sun -dried tomatoes in oil
- Fresh basil leaves
- Mozzarella and Cheddar cheeses (grated)
- Mixed baby leaf salad
Toast the crumpets on both sides and spread each one with the
tomato pizza topping sauce (or passata). Top with the sun-dried
tomatoes and some fresh basil leaves. Sprinkle with a mixture of
grated Mozzarella and Cheddar cheese and place under the grill
until the cheese is melted and bubbling. Garnish with a fresh basil
leaf and serve with a mixed baby leaf salad.
