Emma's Stuffed Mushrooms!
Ingredients:
- 2 Slices Kingsmill white bread
- 2 garlic cloves
- butter
- 2 large field mushrooms
- low fat cream cheese
- seasoning
Time required: 30 minutes
Preheat oven to 180oc/ 350of/ gas mark 4. Remove crusts from bread
and discard (or even better save them for bread crumbs). Rub bread
with open end of a garlic clove and then spread both sides with
butter or low fat spread. Wash field mushrooms, remove end of
stalk, lightly brush with butter (or olive oil). Finely chop garlic
and mix with two good dollops of low fat cream cheese and season to
taste. Spread cheese mix into underside of mushrooms. Cut bread
into four squares and place over the underside of mushrooms,
pressing edges down. Bake for 20 minutes (approx) or until mushroom
is cooked and the bread topping is golden. Serve with a green salad
as a light snack. Alternatively, can be served as a side dish to a
main meal. Enjoy!
