Jo's Cottage Cheese and Chive Pie
Ingredients:
- 250g onions finely chopped
- 1 pack puff pastry
- 2 eggs - beaten
- 100g finely sliced mushrooms
- 50g margarine
- 100g Cheddar cheese, grated
- 250g fresh Kingsmill white breadcrumbs
- 250g Cottage cheese
- Fresh chopped chives
- Salt and pepper

Preparation Time: 30 minutes
Preheat the oven to 220oC, 425oF Gas Mark 7. Fry the onion on a
medium heat until soft, then put on one side to cool. Roll the
pastry out to a large rectangle. Put most of the egg into a large
mixing bowl (reserve two teaspoons to glaze the pastry later). Add
the cooked onion and all of the remaining ingredients to the bowl.
Mix well and season. Spread the mix along the centre of the pastry
rectangle, and then make diagonal slits in the pastry about two
inches (5 cm) apart, nearly to the edge of the mix. Plait the
pastry over the mix, sealing as you go with water or egg (mine is a
very rustic affair!). Place on a baking sheet and make large
diagonal slits in the top. Use the remaining egg to glaze the
pastry then bake in a hot oven until the pastry is golden and
cooked. Serve hot with new potatoes and seasonal vegetables, or
enjoy it cold the next day - it's great for a picnic too!
