Shirley's Spicy Shami Kebab Burgers
Ingredients:
- 450g/1lb lean minced turkey (lamb or beef is also just as nice if preferred)
- 2 tablespoons of Korma curry paste (Patak's works well)
- 2 tablespoons finely chopped fresh coriander
- 1 finely chopped or grated red onion
- 2 finely chopped garlic cloves
- 1 finely chopped red chilli pepper (about 1 tablespoon)
- 1 teaspoon ground cumin
- 1 egg, beaten
- 2 tablespoons flour
- 4-6Kingsmill 50/50 rolls
- Yogurt Sauce (optional)
- Mix together in a bowl
- 1 small pot plain thick yogurt
- 4 finely chopped fresh mint leaves,
- A pinch of ground chilli pepper
- 1/2 teaspoon ground cumin
Serves 4
Mix together the mince, curry paste, coriander, onion, garlic,
chilli and ground cumin in a large bowl. Add the beaten egg and mix
well. Divide the mixture into golf ball sized portions. Dust your
hands with the flour and roll each portion into a firm ball, then
flatten it between the palms of your hands to form burgers of about
5mm thickness.
Barbecue or grill the burgers on each side until cooked thoroughly
then serve in the Kingsmill 50/50 bread buns with salad leaves,
tomato slices and Yogurt Sauce.
