Tangy Ploughman's Crunch
Ingredients:
- 2 slices of Kingsmill Seeds & Oats Soft & Crunchy
- 50g grated hard cheese (preferably the low fat versions)
- 4 baby plum tomatoes
- 4 slices of cucumber
- 3 roughly torn lettuce leafs
- Handful of cress
- 1/2 tablespoon of mayonnaise (again, a low fat version if possible)
- 2 small pieces of feta cheese (20g approx)
Serves 1, 10 mins preparation time
Lay out the two slices of bread and spread one side with the
mayonnaise. Onto the other side place the grated hard cheese. Now
place the lettuce and tomatoes on top of the cheese before adding
the cucumber. At this point I usually add some cress to give it
that extra bit of flavour. Before placing the other slice of bread
on top I add some crumbled feta cheese to give it a tangy kick and
complete the perfect Ploughman's sandwich. Slice the sandwich in
two before tucking in and enjoying.
