Yummy Creamy Fishcakes
Ingredients:
- 4 Fillets of white fish (any kind)
- Knob of butter for frying
- 1 Onion - finely chopped
- 1 Red Pepper - deseeded and finely chopped
- Cream cheese - half a tub
- Fresh Kingsmill breadcrumbs
- Chopped chives
To Serve: Side Salad and Kingsmill Soft White Rolls
Preparation time: 30 minutes
Grill the fish fillets until cooked, then leave to cool and break
into small pieces. Heat a knob of butter in a frying pan and cook
the chopped onion and red pepper slowly, until soft. When cool add
the fish to the onion and peppers and mix well. Add half a tub of
cream cheese, the breadcrumbs and the chives, and mix well. Make
little balls from the mixture, lightly flour and refrigerate until
firm. Take from the fridge and lightly fry until golden brown.
Serve with a side salad and Kingsmill Soft White Rolls.
